Baked Fresh Snowy Mountains Trout

Ingredients:

  • Fresh Snowy Mountain Trout
  • Wollundry Grove Extra Virgin Olive Oil
  • Wollundry Grove Black Manzanillo Olives
  • Dill
  • Pepper
  • Your Choice of Vegetables

Recipe:

  1. Pre-heat oven to 180 degrees.
  2. Lay foil on baking tray and dribble some Wollundry Grove Extra Virgin Olive Oil.
  3. Oil both sides of the fish fillet. 
  4. Transfer fish to the baking tray (skin side down), sprinkle with pepper and dill.
  5. Add Wollundry Grove Black Manzanillo Olives (roughly diced).
  6. Bake for approximately 15 minutes.
  7. While baking, blanch your favourite vegies, drain and dribble more olive oil. 
  8. Remove fish from oven.

Enjoy your delicious trout.
