Wollundry Grove Lemon Cake

Ingredients:

  • 1 ½ cup of Self Raising Flour

  • 135 g (1/2 cup) Wollundry Grove Extra Virgin Olive Oil (Delicate)

  • ½ cup of Milk

  • 1 cup of Caster Sugar

  • 1 Egg lightly beaten (For egg allergy - 4 full tsp Orgran egglike powder)

  • 2 grated Lemon rind

  • 1/2 cup Lemon Juice

Recipe:

  1. Sift flour, add sugar, oil, milk, grated rind, juice, and eggs.

  2. Whisk & mix well.

  3. Bake in moderate oven (170 deg. celsius) approximately 30-35 minutes or skewer comes out clean.
