Our table olives are produced entirely on the property, using the most hygienic equipment and processing methods proven for their ability to retain the natural flavours and varietal character of the olive.

The fruit is of the Manzanillo variety, universally recognised for its fresh olive flavour, generous pulp and suitability for pickling.

The olives are picked mainly while they are still green to maintain their natural texture and processed simply by the strict management of a solution of brine, using salt and water.

Production has been supervised by Linda Costa of Olives-in-Fact, an internationally recognised authority on the processing of table olives.

The result is an exceptional eating olive with a balance between the flavour character of the variety and the subtle, natural flavours imparted by the pickling process.

The microbiological stability of the fruit ensures a long shelf life.
