The oil olives are processed on a modern industrial-size continuous extraction plant within 24 hours of harvesting and the oil subsequently stored in stainless steel vats within a atmosphere controlled cool room.

Measures to reduce the degrading effects of light and air are adopted throughout the entire production process.

To indicate its superior quality and special regional-national nature we have chosen to describe our oil as "“Premium Australian Olive Oil" as well as "Extra Virgin Olive Oil"”.

We believe the quality parameters that define an "extra virgin" olive oil as described by the International Olive Oil Council in Madrid are too broad and Europe-oriented. Given Australia is not a member of the IOOC, it is not bound to parameters designed for another hemisphere and is therefore free to set its own standards.
